That’s what happens when the &lt;/span&gt;&lt;a style="font-style: italic;" href="http://content.nejm.org/" target="blank"&gt;New England Journal of Medicine&lt;/a&gt;&lt;span style="font-style: italic;"&gt; publishes three papers suggesting that a kind of fat previously thought to mostly disappear after infancy actually persists into adulthood — and may someday be the basis for new ways to fight obesity.&lt;/span&gt; &lt;p style="font-style: italic;"&gt;But what is the stuff?&lt;/p&gt; &lt;p style="font-style: italic;"&gt;Scientists call it brown adipose tissue (”adipose tissue” is a fancy way to say “fat”), and it really is brownish. The color comes from mitochondria, which exist inside of cells and produce energy. &lt;/p&gt; &lt;p style="font-style: italic;"&gt;Usually, mitochondria store that energy for later use. But the mitochondria in brown fat don’t do a very efficient job of storage, and lots of the energy is lost in the form of heat. As a result, newborns (and rodents, which also have brown fat) use the stuff to keep warm. Regular fat (aka white adipose tissue) stores energy for future use, but isn’t an internal space heater like brown fat.&lt;/p&gt; &lt;p style="font-style: italic;"&gt;People who are thin appear to have more brown fat than people who are overweight or obese, and the brown fat in thin people appears to be more active in burning energy. It’s stored in the back and around the neck and the collar bone, and it seems to start cranking out the heat when the temperature gets cooler. &lt;/p&gt; &lt;p&gt;&lt;span style="font-style: italic;"&gt;Of course, burning up energy in an inefficient way could be a good way to help people lose weight.
